Dutch Babies!

So I just remembered a while back that my friend and I used to make Dutch Babies for breakfast and pretty much any other time we were hungry. They’re like candy and we’d totally binge on them (but we had high metabolisms back then so it didn’t matter…sigh). Anyway, here’s how we did it. I’m posting this because I googled a recipe for them and there are some really complicated looking ones out there. Here’s how we did it and it’s super simple…

Mix together 1/3 cup milk, 1/3 cup flour, and 3 eggs (my measurements are never exact and it doesn’t seem to matter).

Pour it into a cast iron skillet or a baking stone dish that’s been coated in melted butter (the melted butter part is really just for fun because it still sticks a little (even if you use half a stick of butter – yes, I really did that)).

Bake it at 400 for like 15 minutes or so until it develops big air bubbles and is somewhat golden. (These are all guesstimations).

Then, cover it with a ton (optional) of butter and sprinkle it with a ton (optional) of powdered sugar and eat it! Yay – sugar and butter, just like candy!
I made them for my girls recently for the first time and they are hooked, big time. Olive demands “babies” for breakfast every chance she gets (which sounds a little weird if you don’t know what she means).
